Our philosophy of healthy cooking is based on using the traditional methods of cooking with the right measure of farm fresh ingredients to create Varanasi signature dishes. The mystery of Mughal cooking lies in the subtle blending of spices to produce the right balance of flavour and taste. Our highly skilled team of chefs, through years of experience, has mastered the art of cooking.
They use the indigenous process of grinding whole spices with mortar and pestle to their appropriate levels of fineness. The kitchen brigade also believe in crafting dishes from the roots such as making their own cheese and yogurt; debone meat, fish and poultry in appropriate sizes for their marriage with the dishes. The menu continually evolves with changing seasons.
